Fried Okra Sambol

Recipe Notes:
For this recipe it is best to fry the different ingredients separately to avoid anything burning because they each have different cooking times.
Leave everything separated until you are ready to serve so it stays crispy.
Ingredients:
Produce
500g Okra
1 Roma Tomato
1 Red Onion
3-4 Green Chilis
1 Kalamansi or ½ Lime
10-12 Curry Leaves
Oils & Vinegars
2-3 Cups Oil for frying

Directions:
Step 1. Prep:
Chop the okra crosswise.
Thinly slice the onions, chilis, and tomatoes.
Step 2. Frying:
In a frying pan, heat up the oil over medium - high heat and fry the okra. Usually about 5-6 minutes stirring occasionally.
Set aside on a paper towel to dry, sprinkle a generous amount of salt and mix.
Lower the heat and flash fry the curry leaves, set aside to dry.
Flash fry the green chilis, set aside.
Step 3. Assembly:
Wait to assemble everything until you are ready to serve so that the okra doesn’t loose any crispiness.
In a large mixing bowl combine everything and mix, add salt to taste and finish it off with some lime juice.
Eat by itself as a snack or serve with rice and curry.
