Ladies Fingers (Fried Okra)

Recipe Notes:

To make this dish vegetarian or vegan, skip the dried prawns and substitute the fish sauce for soy sauce.


Ingredients:

Meat

  • 1 ½ Tbs Dried Prawns (soak in water)

Produce

  • 500g Okra

  • 4 Cloves Garlic

  • 4 Shallots

 Condiments

  • 2 Tbs Fish Sauce

 Spices

  • 1-2 Tbs Chili Flakes

Oils & Vinegars

  • 3 Tbs Vegetable Oil

Tools:

  • Large Frying Pan or Wok with Lid

  • Mortar and Pestle or Food Processor

Directions:

Step 1. Prep:

  1. Soak the dried prawns in water for about 15 minutes.

  2. Peel and slice the shallots crosswise.

  3. Peel the garlic.

  4. Drain the dried prawns and add to the mortar and pestle along with the above ingredients.

  5. Roughly pound the dried prawns, shallots, and garlic. Set aside.

  6. Diagonally slice the okra.

Step 2. Cook:

  1. Heat 3 Tbs of oil in a wok on high flame.

  2. Once hot, add the roughly pounded mixture of garlic, shallots, and dried prawns.

  3. Fry until the garlic starts to brown and the shallots start to wilt.

  4. Add the okra and fish sauce, mix thoroughly.

  5. Cover the wok and lower the flame to steam the okra.

  6. Once the okra turns bright green turn off the flame.

  7. Add the chilli flakes and mix once more.

Serve with rice and main dish of your choice :)
