Halmasso Baduma (Fried Anchovies)

Ingredients:

  • 2 Handfuls Sprats (Dried Anchovies)

  • 1/2 Sliced Brown Onion

  • 1 Cinnamon Stick

  • 12 Curry Leaves (1 stick)

  • 2 Tbs Chili Flakes (add 1 tsp water and soak so that it will not burn too fast)

  • 1 tsp Chili Powder

Garnish (optional):

  • Cilantro

  • Lime

Tools:

  • Frying Pan

Directions:

Step 1:

  1. Add a generous amount of oil in a frying pan and fry dried anchovies until crispy.

  2. Set aside on a paper towel to remove excess oil.

  3. Remove some oil from the pan, leaving about 1 Tbs for the next step.

Step 2:

  1. Fry the onions till soft.

  2. Add the cinnamon stick and curry leaves and mix till curry leaves change color or look cooked.

  3. Add the chilli flakes and chilli powder (towards the end so they don’t burn).

  4. Lastly, add the cooked dried anchovies and mix everything together.

Optional:

Garnish with cilantro and a dash of lime if you have any!

Serve with rice or (if you are feeling snack-ish) some toast and a generous amount of butter!
